Buying Korean Dried Seaweed and Gim: Grades and Packing

Seasoned laver is light, cheap and one of the most sensible Korean food imports. Here is how to choose.
The main product types
Seasoned snack laver in small packs, unseasoned sheets for kimbap, and thick-cut gim for side dishes. A 20-pack of snack laver runs 6,000-12,000 KRW and weighs about 100 g total. Kimbap sheets come in packs of 10-100 and are similarly light.
Grades and origin
Korean listings state the harvest region and whether the laver is first-harvest. First-harvest seaweed from specific coastal regions commands two to three times the price of standard product and is noticeably thinner and more tender. That distinction is essentially invisible on US shelves.
The crushing problem
Snack laver packs are rigid trays but the sheets inside are brittle. Packed under a heavier item, an entire box of laver arrives as flakes. Ask for laver to be placed at the top of the shipment or boxed separately from anything dense.
Moisture and shelf life
Sealed packs include a desiccant and typically list 9-12 months. Once opened, laver goes soft within days in humid weather. Buy sizes you will actually finish rather than the largest bulk pack.
